Ingredients
  

  • 1 tbsp olive oil extra virgin
  • 3 cups mushrooms small, chopped
  • 1/2 tsp garlic minced
  • 1/2 cup red bell pepper minced
  • 1 cup carrot peeled, shredded
  • 1/2 cup quinoa rinsed, drained
  • 2 1/2 cups water
  • 1 cube vegetable broth ***Click on our Homemade Vegetable Broth link
  • 2 tbsp tomato paste
  • 1 tsp apple cider vinegar
  • 1 tsp Worcestershire sauce plant-based
  • 1 tsp paprika powder
  • 1 tsp oregano dried
  • 1 tsp tarragon dried
  • 1/2 tsp coriander dried
  • 1/2 tsp salt
  • 1/2 tsp black pepper fresh cracked
  • 1/2 cup kale minced
  • 4 buns whole wheat no bleached flour

Instructions
 

  • Heat the oil in a large pot over medium heat, stir in the mushrooms until they start to release their liquid. Mix in the garlic, pepper and carrot and cook for another 5 minutes.
  • Add in the rest of the ingredients except for the kale, stir and bring to a boil. Lower the heat to medium low and cover. Simmer for 12 to 15 minutes, until the quinoa is fully cooked.
  • Stir in the kale and then serve over toasted buns. Enjoy!
