Spiced Vegetable Rice Pilaf

  • 1 1/2 cup long grained brown rice
  • 2 tbsp olive oil extra virgin
  • 1 tsp cumin seeds
  • 1 cup onion diced
  • 3 cloves garlic diced
  • 1/2 tsp turmeric
  • 2 bay leaves
  • 1 tbsp ginger fresh, minced
  • 1/2 tsp cayenne pepper
  • 1 tsp garam masala
  • 1/2 cup carrot peeled, small diced
  • 1/2 cup green beans ends trimmed, sliced into thirds
  • 2 cups cauliflower florets
  • 1/3 cup peas frozen
  • 1 tsp salt


  • Soak the rice in water and mix to help remove starch. Drain and repeat this step 2 times. Boil a pot of water and begin to cook rice as directed on package.
  • In a large pan, heat the oil over medium heat. Add in the cumin seeds and fry until it darkens in color for about 1 minute. Add in the onion and saute for about 7 minutes or until soft and transparent. Add the garlic, bay leaves, and ginger and saute for about 3 minutes. Continue to add the turmeric, garam masala, and cayenne pepper.
  • Stir in the carrots, green beans, peas, cauliflower, salt and cooked rice. Cover with a lid and leave pan to steam for about 5 to 6 minutes.
  • Uncover and fluff with a fork. Discard the bay leaves and dish up. Enjoy!


Serves well with fresh cilantro, lemon slices, plant based yogurt.
