  • 15 oz black beans drained and rinsed
  • 15 oz kidney beans drained and rinsed
  • 1 red bell pepper chopped
  • 1 large tomato diced
  • 2/3 cup frozen corn
  • 1 red onion diced
  • 1.3 cup olive oil extra virgin
  • 1/4 cup lime juice
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 cup fresh cilantro chopped
  • 1 avocado sliced


  • Combine black beans, kidney beans, bell pepper, tomato, corn and onion in a large bowl. Set aside.
  • In a small bowl, combine olive oil, lime juice, chili powder, garlic powder, cayenne, and salt.
  • Add the olive oil mixture in with the bean mixture. Combine well. Stir in fresh cilantro.
  • Refrigerate for 1 hour to allow flavors to mix.
  • Add avocado slices and gently toss.
