  • 4 cucumbers diced
  • 2 tomatoes chopped
  • 1/2 red onion diced small
  • 1 cup soy yogurt NO SODIUM BENZOATE
  • 1 tbsp fresh cilantro chopped
  • 1/8 tsp salt to taste
  • 1/8 tsp black pepper to taste
  • 1/4 tsp cayenne pepper


  • Combine all ingredients into a large bowl. Stir well.
  • Refrigerate for at least 2 hours to allow flavors to mingle. Toss before serving.
