Stuffed Butternut Squash

  • 2 small butternut squash
  • 1/2 cup orange juice fresh squeezed, no added sugar or preservatives
  • 2 apples diced
  • 1/2 cup chopped pecans
  • 1/3 cup rehydrated dried cranberries
  • 1/4 cup agave nectar
  • 2 tbsp Earth Balance Butter
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg


  • Preheat oven to 350 degrees.
  • Slice the squash in half lengthwise and scrape out the stringy parts and seeds.
  • Add the orange juice to a baking dish and place the squash face down into the juice. Microwave for 10 minutes
  • In a large bowl, combine the remaining ingredients.
  • Equally dividing the apple mixture, stuff the squash. Pile any extra on top. Bake for 25 minutes.
