  • 4 cups baby carrots
  • water for cooking
  • 1 tsp lemon juice fresh squeezed, no added sugar or preservatives
  • 2 tbsp Earth Balance Butter
  • 2 tbsp brown sugar
  • 1/4 tsp sea salt


  • Place carrots into a medium saucepan and cover with water. Cook on medium low for 8-10 minutes until carrots are just soft. Avoid overcooking. Drain and place back into the pan.
  • Add in remaining ingredients, stirring frequently until a glaze is formed, covering the carrots.
