Sweet Potato Salad

  • 4 cups sweet potato peeled, cubed
  • 3/4 cup green onions chopped
  • 1/2 cup parsley fresh, chopped
  • 1/4 cup tart cherries dried
  • 1/4 cup red wine vinegar
  • 2 tbsp mustard coarse
  • 2 tbsp olive oil extra virgin, divided
  • 1 clove garlic minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper fresh cracked


  • Preheat oven to 400 degrees while you line a baking sheet with parchment paper.
  • Coat the sweet potatoes with 1 tablespoon of olive oil then place in a single layer on the prepared baking sheet.
  • Roast for 26 to 30 minutes or until tender, tossing the potatoes half way through the bake time.
  • Once cooled add the potatoes to a large bowl along with the green onions, parsley, and cherries; gently mix.
  • Whisk together the vinegar, mustard, olive oil, garlic, salt and pepper in a small bowl. Pour mixture over the sweet potatoes then toss gently to coat. Serve still warmed or cover and place in the fridge until ready to serve.
