Preheat oven to 400 degrees while you line a baking sheet with parchment paper.
Coat the sweet potatoes with 1 tablespoon of olive oil then place in a single layer on the prepared baking sheet.
Roast for 26 to 30 minutes or until tender, tossing the potatoes half way through the bake time.
Once cooled add the potatoes to a large bowl along with the green onions, parsley, and cherries; gently mix.
Whisk together the vinegar, mustard, olive oil, garlic, salt and pepper in a small bowl. Pour mixture over the sweet potatoes then toss gently to coat. Serve still warmed or cover and place in the fridge until ready to serve.
