  • 4 small beets peeled and chopped
  • water for boiling
  • 16 oz spinach
  • 1 cup strawberries sliced, quartered
  • 1/2 cup pecans chopped
  • 1/4 cup olive oil extra virgin
  • 2 tbsp red wine vinegar
  • 2 tbsp agave nectar
  • 2 tbsp orange juice fresh
  • 1/8 tsp salt to taste
  • 1/8 tsp black pepper to taste


  • Place beets in a medium sauce pan and boil until soft. Cool completely.
  • Combine spinach, strawberries, pecans, and cooled beets. Set aside.
  • In a different bowl, combine olive oil, vinegar, agave nectar, and orange juice. Whisk well. Drizzle the dressing over the spinach mixture, tossing gently. Season with salt and pepper to taste.
