Sweet Roasted Squash
- 1 butternut, acorn, or spaghetti squash
- 1/2 tsp sea salt
- 4 tbsp orange juice
- 4 tbsp agave nectar
- 1/8 tsp nutmeg
- Preheat the oven to 400 degrees.
- Cut squash into fourths and scrape out the seeds. Place squash into a casserole dish. Sprinkle with sea salt and nutmeg and drizzle orange juice and agave onto each quarter.
- Cover with foil and bake for 45 minutes or until squash is soft. Baste the squash with the liquid in the bottom of the dish every 15 minutes.
