Sweet Roasted Squash

  • 1 butternut, acorn, or spaghetti squash
  • 1/2 tsp sea salt
  • 4 tbsp orange juice
  • 4 tbsp agave nectar
  • 1/8 tsp nutmeg


  • Preheat the oven to 400 degrees.
  • Cut squash into fourths and scrape out the seeds. Place squash into a casserole dish. Sprinkle with sea salt and nutmeg and drizzle orange juice and agave onto each quarter.
  • Cover with foil and bake for 45 minutes or until squash is soft. Baste the squash with the liquid in the bottom of the dish every 15 minutes.
