Ingredients
  

  • 8 oz tempeh diced small
  • water for boiling
  • 3 tbsp Healthy Homemade Mayonnaise see recipe link
  • 2 tsp lemon juice fresh
  • 1/2 tsp garlic powder
  • 1 tsp Dijon mustard
  • 2 tbsp sweet pickle relish NO PRESERVATIVES
  • 1/2 cup green peas
  • 2 stalks celery diced small
  • 1 tbsp fresh dill chopped

Instructions
 

  • Place the tempeh in a sauce pan and cover with water. Simmer for approximately 10 minutes until the tempeh is soft. Drain and cool completely.
  • In a large bowl, mix mayonnaise, lemon juice, garlic powder, mustard, and relish.
  • Add the cooled tempeh to the mayonnaise mixture and then stir in the peas, celery, and dill. Gently toss.
  • Place in the refrigerator and chill for at least an hour.

Notes

Enjoy in a bowl or between two slices of bread!
