Vegetable Lo Mein

  • 13.5 oz whole-wheat spaghetti Tinkyada brand
  • 2 1/2 cups water
  • 1 1/2 cups vegetable broth ***Click on our Homemade Vegetable Broth link
  • 3 tbsp soy sauce low sodium, NO SODIUM BENZOATE
  • 1 tsp sesame oil
  • 2 cloves garlic minced
  • 1 tbsp rice wine vinegar
  • 1 tbsp ginger fresh, grated
  • 1 cup bell pepper julienned, assorted color
  • 1 cup mushrooms diced
  • 1 cup brocolli florets crumbled
  • 8 oz water chestnuts halved
  • 1/4 cup scallions diced


  • Add everything but the scallions to a deep skillet and push the pasta underneath the liquid. Bring to a boil, then turn the heat down to medium-low and simmer until the pasta is al dente, about 10 minutes.
  • Keep stirring to try keep the pasta below the liquid and to make sure everything is evenly cooked. Before serving sprinkle the pot with scallions. Enjoy!
