Ingredients
  

  • 2 tbsp olive oil extra virgin
  • 1 cup onion minced
  • 3 cloves garlic minced
  • 1 cup sweet potato chunks
  • 1 cup red cabbage chopped
  • 1 cup carrots peeled, chopped
  • 5 cups water
  • 1 1/2 cups split peas
  • 2 cubes vegetable bouillon *see Homemade Bouillon recipe link
  • 2 leaves bay
  • 2 tsp thyme dried
  • 1 tsp marjoram dried
  • 1/2 tsp rosemary dried
  • 1/2 tsp liquid smoke
  • 1/2 tsp salt
  • 1/2 tsp black pepper fresh cracked

Instructions
 

  • Heat the oil over medium heat in a large pot and saute the onions and garlic for about 5 minutes. Add the sweet potato, cabbage, carrots, and saute for another 4 to 5 minutes more.
  • Mix in the water, bouillon, split peas, bay leaves, thyme, marjoram, rosemary, and liquid smoke. Bring to a boil, then reduce the heat to simmer for 40 to 45 minutes; until the vegetables are fork tender.
  • Before serving, add salt and pepper to taste. Enjoy!
