Ingredients
- 3 cups Chinese cabbage minced
- 1 cup cucumber peeled and cubed
- 1 cup mini carrots thinly sliced
- 1 cup radishes thinly sliced
- 1 cup smoked tofu cubed
- 1/2 cup cashews lightly browned
- 1 oz mint minced
Dressing
- 6 tbsp lime juice fresh squeezed, no added sugar or preservatives
- 2 tbsp fish sauce plant-based fish sauce, no gluten
- 1 tbsp agave
- 1 tbsp fresh ginger minced
- 1 small red chili pepper minced
Instructions
- In a large bowl, add the cabbage, cucumber, carrots, radishes, and tofu.
- In a small bowl, mix the lime juice, fish sauce, agave, ginger, and red chili pepper.
- Pour the dressing on top of the cabbage mixture and add the nuts and minced mint. Toss well.
