  • 3 cups Chinese cabbage minced
  • 1 cup cucumber peeled and cubed
  • 1 cup mini carrots thinly sliced
  • 1 cup radishes thinly sliced
  • 1 cup smoked tofu cubed
  • 1/2 cup cashews lightly browned
  • 1 oz mint minced


  • 6 tbsp lime juice fresh squeezed, no added sugar or preservatives
  • 2 tbsp fish sauce plant-based fish sauce, no gluten
  • 1 tbsp agave
  • 1 tbsp fresh ginger minced
  • 1 small red chili pepper minced


  • In a large bowl, add the cabbage, cucumber, carrots, radishes, and tofu.
  • In a small bowl, mix the lime juice, fish sauce, agave, ginger, and red chili pepper.
  • Pour the dressing on top of the cabbage mixture and add the nuts and minced mint. Toss well.
