Walnut "Meat" Tacos

Ingredients
  

  • 1/2 cup red onion chopped
  • 1/2 tbsp garlic chopped
  • 1 tsp olive oil
  • 1 cup walnuts raw, no shell, unsalted
  • 1/2 tsp soy sauce low sodium, NO SODIUM BENZOATE
  • 1/4 tsp paprika powder
  • 1/4 tsp salt
  • 1/4 tsp dried thyme
  • 8 shells taco shells no bleached flour
  • 2 cups mixed greens
  • 1/2 cup purple cabbage shredded
  • 8 cherry tomatoes halved
  • 2 tbsp cilantro chopped
  • 3 tbsp canned corn no salt added, rinsed, and drained
  • 1 tbsp plant-based crema

Instructions
 

  • In a pan, add the olive oil and bring to medium high heat. Add the chopped onions and garlic and cook until softened and translucent.
  • Chop the walnuts in a food processor until coarsely ground. Combine with onion and garlic in pan. Mix in soy sauce, paprika, thyme, and salt and cook for 6-8 minutes stirring occasionally to prevent burning.
  • Add onto each taco cabbage, corn, tomatoes, greens, and walnut "meat". Drizzle the taco's with the plant-based crema, and a sprinkle of cilantro. Enjoy!
