White Nut Roast with Herb Stuffing

  • 3 tbsp olive oil extra virgin, melted, divided

White Nut Roast

  • 3 tbsp Earth Balance butter
  • 1 tbsp olive oil extra virgin
  • 2 cups white onion finely chopped
  • 2 1/2 cups cashews finely ground
  • 2 cups breadcrumbs whole wheat
  • 1 cup white mushrooms finely chopped
  • 2/3 cup vegetable broth ***Click on the Vegetable Broth recipe link
  • 1/2 tsp nutmeg ground

Green Herb Stuffing

  • 3 cups breadcrumbs whole wheat
  • 2 tbsp lemon zest
  • 4 tbsp lemon juice fresh squeezed, no sugar added or preservatives
  • 2 tsp Herbes de Provence dried
  • 6 tbsp parsley chopped
  • 3 1/2 tbsp Earth Balance butter melted


  • Preheat the oven to 350 degrees while you coat the inside of a loaf tin with 1 tbsp of olive oil.
  • Make the roast by melting the butter and olive oil in a large saucepan over low-medium heat then saut√© the onions for 13-15 minutes. Remove from the heat, then stir in all of the other ingredients.
  • Make the stuffing by simply blending all the ingredients together in a food processor.
  • Assemble the roast by layering half of the white nut mixture, then all of the stuffing, top with remaining white nut mixture. Drizzle remaining olive oil over the top then cover the roast with a piece of baking parchment tucked into the sides of the pan.
  • Bake for 45 minutes, then remove the paper and continue to bake for a further 15 minutes, until golden brown. Enjoy!
