White Wine and Mushrooms Orzo

  • 1 cup mushrooms sliced
  • 1 cup white or yellow onion chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil extra virgin
  • 1 1/2 cups vegetable broth low sodium
  • 1/2 cup white wine
  • 1 1/2 cups orzo
  • 2 tbsp Earth Balance Butter
  • 2 tbsp nutritional yeast
  • 2 tbsp fresh basil chopped
  • 1/8 tsp salt to taste
  • 1/8 tsp black pepper to taste


  • In a large stock pot with a lid, sauté mushrooms, onions, and garlic in the olive oil for 4 minutes or until onions are soft.
  • Lower the heat and mix in the vegetable broth, white wine, and orzo. Mix well, cover, and simmer for 8-10 minutes or until the orzo is cooked and the liquid is absorbed. Add in butter.
  • Remove from heat and stir in the nutritional yeast and fresh basil. Salt and pepper to taste.
