Ingredients
  

  • 3 large sweet potatoes grated
  • 1 apple grated
  • 1 small onion grated
  • 2 plant-based egg substitute or ground flaxseed
  • 3 tbsp flour no bleached flour
  • 1 tsp baking powder Brand: Bob's Red Mill, No aluminum
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 tbsp olive oil

Instructions
 

  • Grate the sweet potatoes, apples, and onion in a food processor. Use paper towels to absorb excess moisture of the sweet potatoes and apples. Combine in a large bowl.
  • Add in the remaining ingredients except the oil. Mix well.
  • In a medium frying pan, add oil and heat. Place potato mixture into the hot oil using 1/4 cup scoop at a time. Using a spatula, flatten the potato mixture to form a pancake. Cook for 3-4 minutes on each side or until lightly crispy.

Notes

Serve with no-sugar applesauce or non-dairy sour cream for different tastes.
