Ingredients
  

  • 1 cup onion diced
  • 1 tbsp olive oil extra virgin
  • 1 tsp cumin
  • 4 large cooked potatoes chopped
  • 3 tbsp lemon juice fresh
  • 2 tsp Dijon mustard
  • 1/8 cup green onions greens only
  • 1/4 tsp cayenne pepper
  • 2 tbsp fresh cilantro chopped

Instructions
 

  • In a skillet place 1 tbsp oil, cook onions and cumin until onions are soft. Remove from heat and set aside.
  • In a medium bowl, whisk together lemon juice and mustard. Pour over potatoes, gently tossing to mix. Add green onions, cayenne pepper, and cilantro and mix well.
  • Chill for 1 hour before serving.
