Ingredients
  

  • 3 cups watermelon 1/2 inch cubed
  • 1/2 cup cucumber thinly sliced
  • 2 tbsp red onion finely diced
  • 4 radishes thinly sliced
  • 1 1/2 tbsp mint leaves roughly chopped
  • 2 tbsp peanuts chopped

Dressing

  • 1 tbsp lime juice fresh squeezed
  • 2 tbsp soy sauce low sodium, NO SODIUM BENZOATE
  • 1 tsp agave nectar
  • 1/4 tsp chili powder
  • 1/2 tsp ginger fresh, grated

Instructions
 

  • Place the watermelon cubes in a colander to drain some of the water while you prepare the remaining ingredients.
  • Prepare the dressing, in a small bowl by whisking together the lime juice, soy sauce, agave, chili powder and ginger.
  • In a large bowl, toss together the watermelon, cucumber, red onion, and radishes. Dish the salad into two separate bowls. Drizzle with dressing and garnish with the mint and peanuts. Enjoy!
