Ingredients
  

  • 1/2 cup brown rice
  • 1 cup tomato sauce
  • 1/4 cup vegetable broth ***Click on the Vegetable Broth recipe link
  • 2 tbsp jalapeno pepper diced
  • 1/4 cup onion roughly chopped
  • 2 cloves garlic minced
  • 1/2 tsp cumin powder
  • 1/2 tsp oregano dried
  • 1/2 tsp chili powder
  • 1/4 tsp salt
  • 1 1/2 cups black beans canned, drained, rinsed
  • 1 tbsp lime juice fresh squeezed
  • 6 wraps large, no bleached flour
  • 3 cups spinach fresh, chopped, washed
  • 1 cup avocado peeled, pitted, sliced

Instructions
 

  • Cook the rice according to the directions on the package as directed. Once cooked set aside in a large bowl.
  • In a small food processor, combine the tomato sauce, vegetable broth, jalapeno, onion, garlic, cumin, oregano, chili powder and salt until blended smooth. Transfer the sauce to a wide skillet and simmer over low heat for about 5 minutes, stir to prevent sticking.
  • Add the cooked rice and beans to the sauce and mix well. Continue cooking for about 5 minutes to heat through. Remove from heat and pour in the lime juice and give another stir.
  • Place a small handful of spinach in the middle of each wrap and top with the bean and rice mixture and a couple of avocado slice. Roll up like a burrito.
  • Place the rolled wraps in a dry large skillet 2 at a time and toast first on the seam side, then on the other side for added crunchiness. Enjoy!

Pairs well with salsa.
