Ingredients

▢ 1 tbsp olive oil extra virgin
▢ 1 cup onion chopped
▢ 1 1/2 cups baby carrots chopped
▢ 2/3 cup lentils split red
▢ 2 tbsp vegetable bouillon *see our Homemade Bouillon recipe link
▢ 6 1/2 cups water
▢ 1/4 cup lemon juice fresh squeezed, no sugar added or preservatives
▢ 1 tsp salt
▢ 1 tsp black pepper

Instructions

Heat the olive oil in a large saucepan over low heat and sauté the onion for about 5 minutes.
Add in the carrots, lentils, bouillon, and water then bring pot to a boil.
Cover and reduce heat to simmer for about 20 minutes until the carrots are tender and the lentils are pale in color.
Pour the lemon juice, salt and pepper into the pot then puree the soup using the immersion blender. Serve hot and enjoy.
