Ingredients
  

  • 1 cup porcini mushrooms sliced
  • 1 cup shiitake mushrooms sliced
  • 1 1/2 cups celery diced
  • 1/2 cup onions chopped
  • 1 tbsp olive oil extra virgin, divided
  • 1 1/4 cups barley
  • 3 3/4 cups vegetable broth low sodium
  • 1 bay leaf
  • 1/4 tsp sage fresh or dried
  • 1/2 tsp parsley fresh or dried
  • 1/2 tsp thyme fresh or dried

Instructions
 

  • In a large skillet, sauté mushrooms, celery, and onions in 1/2 tbsp of the olive oil union everything is soft. Stir in barley and the remaining tablespoon of olive oil and toast the barley.
  • Add in remaining ingredients. Bring to a low simmer, cover, and allow to cook for 20-25 minutes or until barley is cooked and liquid is absorbed. Remove bay leaf before serving.
