Ingredients
  

  • 1 1/2 cups quinoa
  • 1 1/2 cups vegetable broth low sodium
  • 1 1/2 cups water
  • 3 tbsp balsamic vinegar
  • 1 tbsp olive oil extra virgin
  • 1 tbsp lemon juice fresh squeezed, no added sugar or preservatives
  • 1/8 tsp salt
  • 1/2 cup sun-dried tomatoes chopped
  • 1/2 cup artichoke hearts chopped
  • 1/2 cup Kalamata olives sliced

Instructions
 

  • In a large skillet with a lid, add the quinoa, vegetable broth, and water. Bring to a boil then reduce heat, stir well, cover, and allow to cook for 15 minutes or until liquid is absorbed and quinoa is cooked. Remove from the heat and fluff with a fork and allow to rest for 5 more minutes.
  • Add the remaining ingredients, gently mixing to combine flavors. Serve immediately.
