2bunchesfresh spinachwashed and trimmed

Instructions
In a large stock pot, sauté the onion, garlic, and mushrooms for 4 minutes or until onion is soft. Whisk in flour and cook an additional minute.
Reduce heat to medium low and add spinach and soy milk. Cook uncovered for approximately 10 minutes or until spinach is soft and liquid has cooked down.
Mix in remaining ingredients and salt and pepper to taste.
Notes
Remember that the spinach will shrink as it cooks so add plenty.
