Creamed Spinach with Mushrooms

  • Stove


  • 1/2 white onion diced
  • 2 cloves garlic minced
  • 1 1/2 cups mushrooms sliced
  • 2 tbsp olive oil extra virgin
  • 1 tbsp flour no bleached flour
  • 2 bunches fresh spinach washed and trimmed
  • 1 cup soy milk NO SODIUM BENZOATE
  • 1 tbsp Earth Balance Butter
  • 2 tbsp nutritional yeast optional
  • 1/8 tsp black pepper to taste
  • 1/8 tsp salt to taste


  • In a large stock pot, sauté the onion, garlic, and mushrooms for 4 minutes or until onion is soft. Whisk in flour and cook an additional minute.
  • Reduce heat to medium low and add spinach and soy milk. Cook uncovered for approximately 10 minutes or until spinach is soft and liquid has cooked down.
  • Mix in remaining ingredients and salt and pepper to taste.


Remember that the spinach will shrink as it cooks so add plenty.
