Instructions
Cut potatoes into 1/8 inch thick slices. Set aside.
Heat onions in 2 tbsp of waterl in a large skillet on medium heat. Cook until onions are slightly soft.
Reduce the heat to simmer and add potatoes, green onions. Add salt and pepper to taste.
Notes
Make sure the potatoes are not overcooked or the potato salad becomes mushy. You can also add 3 tbsp
plant-based bacon bits as an option.
