Ingredients
  

  • 4 large potatoes precooked and cooled
  • 1 cup yellow onion thinly sliced
  • 2 tbsp olive oil extra virgin
  • 1/3 cup water
  • 1/3 cup white vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp whole wheat flour no bleached flour
  • 1 tsp agave nectar
  • 1/4 cup green onions greens only, chopped
  • 1/8 tsp salt to taste
  • 1/8 tsp black pepper to taste

Instructions
 

  • Cut potatoes into 1/8 inch thick slices. Set aside.
  • Heat onions in the olive oil in a large skillet on medium heat. Cook until onions are slightly soft.
  • Reduce the heat to simmer and add potatoes, green onions. Add salt and pepper to taste.

Notes

Make sure the potatoes are not overcooked or the potato salad becomes mushy. You can also add 3 tbsp plant-based bacon bits as an option.
