Remove stems, finely chopped
Instructions
In a large pot boil water and salt add orzo cook for 5 minutes. Drain and rinse with cold water. Set aside.
In a large skillet, add a thin layer of water. Heat to medium high and add the sweet potatoes. Cook for 3-4 minutes on each side.
Reduce heat to medium and stir in the onions, garlic and ginger. Saute for 1-2 minutes.
Add the shitake mushrooms and cook for 1 minute then flip and cook for 1 minute more.
Mix in the balsamic vinegar and the soy mix to prevent sticking. Cook for 3 minutes.
Turn the heat back to medium-high and add the orzo gradually, stirring constantly cook for 5 minutes.
Add the spinach and cook for about 1 minute or until spinach has softened.
Notes
Great tasting recipe you can also add VioLife grated Parmesan for a great tasting main dish or add as a side dish.
