Orzo, Sweet Potato, Ginger

Equipment

Ingredients
  

  • 1 tsp Salt
  • 1 1/2 Cup Orzo Uncooked
  • 1 3/4 Cup Sweet Potato Diced
  • 2 Cups White Onion Diced
  • 2 Tbsp Fresh Garlic Minced
  • 1 Tbsp Fresh Ginger Grated
  • 1/2 Cup Shitake Mushrooms Stems removed, Dice caps
  • 1 Tbsp Balsamic Vinegar
  • 3 Tbsp Soy Sauce Gluten-Free, Low Sodium, NO SODIUM BENZOATE!
  • 2 Cups Spinach Remove stems, finely chopped
  • 2 tbsp Grapeseed oil

Instructions
 

  • In a large pot boil water and salt add orzo cook for 5 minutes.
  • Rinse with cold water and drain. Drizzle with grapeseed oil set aside
  • In large frying pan drizzle in 1 Tbsp grapeseed oil heat on med-high
  • Add sweet potato cook for 4 minutes then turn over and cook for another 3 minutes
  • Turn heat down to medium
  • Drizzle in the last Tbsp of grapeseed oil
  • Add the onions and stir occasionally
  • Add garlic and ginger and stir
  • Add the shitake mushrooms cook for 1 minute then flip and cook for 1 minute
  • Mix in the balsamic vinegar and the low sodium soy mix to prevent sticking cook for 3 minutes
  • Turn the heat back to medium-high and add the orzo gradually, stirring constantly cook for 5 minutes
  • Add the spinach and cook for about 1 minute
  • Serve about 1 cup each serving

Notes

Great tasting recipe you can also add VioLife grated Parmesan for a great tasting main dish or add as a side dish.
