1/3cuppineapple juicefresh squeezed, no added sugar or preservatives
2tbspred wine vinegar
1/4cuptoasted coconut flakes
2tbspfresh mintchopped
Instructions
In a large bowl, add cooked brown rice, celery, pineapple, macadamia nuts, and dried papaya.
In a separate small bowl, combine pineapple juice, and vinegar. Whisk together well. Add in cooked rice mixture and mix well,
Place in refrigerator and chill for 1 hour.
Add in coconut flakes and mint and gently toss. Serve immediately.
