Pineapple and Mint Rice Salad

  • Refrigerator


  • 4 cups brown rice cooked
  • 2 cups celery diced
  • 1 cup pineapple fresh
  • 1/3 cup macadamia nuts chopped
  • 1/4 cup dried papaya
  • 1/3 cup pineapple juice fresh squeezed, no added sugar or preservatives
  • 2 tbsp olive oil extra virgin
  • 2 tbsp red wine vinegar
  • 1/4 cup toasted coconut flakes
  • 2 tbsp fresh mint chopped


  • In a large bowl, add cooked brown rice, celery, pineapple, macadamia nuts, and dried papaya.
  • In a separate small bowl, combine pineapple juice, olive oil, and vinegar. Whisk together well. Add in cooked rice mixture and mix well,
  • Place in refrigerator and chill for 1 hour.
  • Add in coconut flakes and mint and gently toss. Serve immediately.
