Break up tofu into 1 inch crumbles using your fingers or cut into squares. Set aside.
In a medium pan, sauté onions and garlic in 2 tbsp of water until onions are translucent.
Add in the tofu crumbles, chili pepper, bell pepper, and mushrooms. Stir until well mixed.
Stir in the remaining ingredients, except the nutritional yeast, stirring constantly. Allow to cook until tofu is lightly browned on all sides, approximately 6-8 minutes.
Remove from the stove and add in the nutritional yeast and serve immediately.

Eat in a bowl or add to a tortilla for a breakfast burrito.
