1/2tspsalt
1/8tspblack peppercracked
Dressing
1/4cuporange juicefresh squeezed
2tbsporange zest
1tbspapple cider vinegar
1/4tspsalt
1tspagave nectar
Salad
1orangesegmented
2cupspinachchopped, or baby
1/4cupred onionfinely diced
2tbspmintfresh, thinly sliced
1/4cup pumpkin seedstoasted
6ozdatespitted, roughly chopped
Instructions
Prepare the couscous, in a dry skillet with a lid, toast the couscous over medium heat until golden brown for about 3 to 4 minutes. Remove the pan from the heat, pour in the water and cover. Set aside for 5 minutes. Uncover, and sprinkle in the salt and pepper. Fluff with a fork.
In a medium sized bowl, whisk together all the dressing ingredients.
Mix together the couscous, orange slices, spinach, red onion, mint, pumpkin seeds, and dates. Separate the mix into two bowls and drizzle with the dressing depending on taste. Serve immediately and enjoy!
