Ingredients
  

Couscous

  • 1 cup couscous uncooked
  • 1 cup water
  • 1/2 tsp salt
  • 1/8 tsp black pepper cracked

Dressing

  • 1/4 cup orange juice fresh squeezed
  • 2 tbsp orange zest
  • 1 tbsp olive oil extra virgin
  • 1 tbsp apple cider vinegar
  • 1/4 tsp salt
  • 1 tsp agave nectar

Salad

  • 1 orange segmented
  • 2 cup spinach chopped, or baby
  • 1/4 cup red onion finely diced
  • 2 tbsp mint fresh, thinly sliced
  • 1/4 cup pumpkin seeds toasted
  • 6 oz dates pitted, roughly chopped

Instructions
 

  • Prepare the couscous, in a dry skillet with a lid, toast the couscous over medium heat until golden brown for about 3 to 4 minutes. Remove the pan from the heat, pour in the water and cover. Set aside for 5 minutes. Uncover, and sprinkle in the salt and pepper. Fluff with a fork.
  • In a medium sized bowl, whisk together all the dressing ingredients.
  • Mix together the couscous, orange slices, spinach, red onion, mint, pumpkin seeds, and dates. Separate the mix into two bowls and drizzle with the dressing depending on taste. Serve immediately and enjoy!
