Combine the boiling water and flax seed in a small bowl then set to the side.
Preheat the oven to 375 degrees while you line a baking sheet with parchment paper.
Mix together the flax seed mixture, beans, garlic, and salt in a food processor; pulse just until smooth. Add in the onion, bell pepper and parsley; pulse until combined. Transfer to a bowl and stir in the breadcrumbs.
Shape mixture into 32 (1' inch) patties. Place on prepared baking sheet and bake for 10 minutes; flip then bake another 10 minutes.
Serve in mini pita rounds with avocado slices and salsa. Enjoy!
