Ingredients
  

  • 6 tbsp boiling water
  • 2 tbsp flaxseed ground
  • 15 oz black beans canned, drained, rinsed
  • 2 cloves garlic chopped
  • 1/4 tsp salt
  • 1/2 cup onion chopped
  • 1/2 cup red bell pepper chopped
  • 2 tbsp parsley fresh, chopped
  • 1 cup bread crumbs plain
  • 32 pieces pita bread mini, whole wheat, halved horizontally
  • 1/2 cup avocado slices
  • 1/2 cup salsa *see our Salsa recipe link

Instructions
 

  • Combine the boiling water and flax seed in a small bowl then set to the side.
  • Preheat the oven to 375 degrees while you line a baking sheet with parchment paper.
  • Mix together the flax seed mixture, beans, garlic, and salt in a food processor; pulse just until smooth. Add in the onion, bell pepper and parsley; pulse until combined. Transfer to a bowl and stir in the breadcrumbs.
  • Shape mixture into 32 (1' inch) patties. Place on prepared baking sheet and bake for 10 minutes; flip then bake another 10 minutes.
  • Serve in mini pita rounds with avocado slices and salsa. Enjoy!

Notes

Serves well with a side of baked sweet potato fries.
