Instructions
Heat 2 tbsp of water over medium heat in a large pot. Saute the onion, garlic, mushrooms, bell pepper and tempeh for about 10 minutes.
Stir in the tomatoes, basil, oregano, vegetable broth, salt and pepper. Reduce the heat to medium low and simmer for about 40 minutes.
Ladle into 4 individual bowls and enjoy!
Notes
Serves well over a cup of brown rice and garnished with cilantro.
