Ingredients
- 1 tbsp olive oil extra virgin
- 1/2 cup onion minced
- 2 cloves garlic peeled
- 2 cups mushrooms chopped
- 2 cups bell pepper chopped, assorted colors
- 8 oz tempeh plain, cubed, steamed
- 14.5 oz tomatoes diced, fire roasted
- 1 tsp basil dried
- 1 tsp oregano dried
- 1 cup vegetable broth *see our Homemade Vegetable Broth recipe link
- 1 tsp salt
- 1/4 tsp black pepper fresh cracked
Instructions
- Heat the oil over medium heat in a large pot. Saute the onion, garlic, mushrooms, bell pepper and tempeh for about 10 minutes.
- Stir in the tomatoes, basil, oregano, vegetable broth, salt and pepper. Reduce the heat to medium low and simmer for about 40 minutes.
- Ladle into 4 individual bowls and enjoy!
Notes
Serves well over a cup of brown rice and garnished with cilantro.
