1tbspsoy saucelow sodium, NO SODIUM BENZOATE
3clovesgarlicminced
5slicesfresh ginger or galangal
1stalklemongrassoptional
1tbsplime juicefresh
2smallchilieschopped
1/2tspred pepper flakesto taste
1onionchopped
1carrotthinly sliced
1/2cupmushroomssliced
1/4cupfresh cillantrochopped
Instructions
In a large stock pot, mix the coconut milk and vegetable broth and warm over medium low heat. Add the soy sauce, garlic, ginger, lemongrass, lime juice, chilies, and red pepper flakes. Do not allow to boil.
After broth is hot, add onion, tomatoes, carrot, and mushrooms. Cover and continue to cook on low heat for 15 minutes.
Pour soup into bowls and sprinkle with cilantro.
