  • 14 oz coconut milk can
  • 2 cups vegetable broth ***Click on our Homemade Vegetable Broth link
  • 1 tbsp soy sauce low sodium, NO SODIUM BENZOATE
  • 3 cloves garlic minced
  • 5 slices fresh ginger or galangal
  • 1 stalk lemongrass optional
  • 1 tbsp lime juice fresh
  • 2 small chilies chopped
  • 1/2 tsp red pepper flakes to taste
  • 1 onion chopped
  • 1 carrot thinly sliced
  • 1/2 cup mushrooms sliced
  • 1/4 cup fresh cillantro chopped


  • In a large stock pot, mix the coconut milk and vegetable broth and warm over medium low heat. Add the soy sauce, garlic, ginger, lemongrass, lime juice, chilies, and red pepper flakes. Do not allow to boil.
  • After broth is hot, add onion, tomatoes, carrot, and mushrooms. Cover and continue to cook on low heat for 15 minutes.
  • Pour soup into bowls and sprinkle with cilantro.
