Ingredients
- 12 oz package of Asian-style noodles
- 1/3 cup peanut butter
- 2 tbsp soy sauce low sodium, NO SODIUM BENZOATE
- 2/3 cup pineapple juice fresh squeezed, no added sugar or preservatives
- 2 cloves garlic minced
- 1 tsp fresh ginger grated
- 1/4 tsp salt
- 2 small chilies minced
- 3/4 cup fresh pineapple diced
Instructions
- Prepare the Asian-style noodles according to the instructions on the package.
- Mix together the peanut butter, soy sauce, pineapple juice, garlic, ginger, and salt over low heat in a small saucepan. Mix well.
- In a large skillet, warm 2 tbsp of water. Fry the chilies and pineapple for about 3 minutes until pineapple is lightly toasted. Add noodles and fry for 1 minute, stirring well.
- Reduce to simmer and add peanut butter mixture. Stir well until heated through.
