  • Stove


  • 1 lb asparagus
  • 1 lb cherry tomatoes quartered
  • 2 ripe avocados peeled and cubed
  • 1 tbsp olive oil extra virgin
  • 3 tbsp lemon juice fresh squeezed, no added sugar or preservatives
  • 1 tsp agave nectar
  • 1 oz tarragon chopped fine
  • 1 oz fresh mint chopped fine
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1/4 tsp Sriracha sauce no preservatives


  • Remove the bottom inch from the asparagus and discard. Cut the rest into small pieces including the head. Steam for 5-7 minutes. (Cooking time depends on the thickness of the asparagus.)
  • In a large bowl, add the tomatoes and avocado with the lemon juice so they retain their color. Add in the asparagus.
  • In a small bowl, add the remaining ingredients and mix well. Drizzle over the asparagus and tomato mixture and serve.
