Banana Pancakes

  • Stove or Griddle


  • 1 cup all purpose wheat flour non bleached
  • 2 tbsp sugar
  • 1 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 banana
  • 1 tsp vanilla extract
  • 1 cup soy milk NO SODIUM BENZOATE
  • 2 tbsp Earth Balance butter


  • In a large bowl, mix together flour, sugar, baking powder, and salt. Set aside.
  • In a small bowl, mash the banana with a fork. Stir in the vanilla extract and whisk until a smooth consistency.
  • Stir in the soy milk to the flour mixture.
  • Warm the griddle and lightly grease with the butter. Pour about 3 tablespoons of batter onto the griddle or pan. Cook until bubbles appear, approximately 2-3 minutes, then flip and cook an additional 1-2 minutes, until lightly brown
