Place the seitan into a medium sized bowl then add 1/4 cup of barbecue sauce; stir to coat. Marinate in the refrigerator for 30 minutes. Soak the skewers in water for 20 minutes if they are wooden, if they are metal this step is unnecessary.
Brush the grill with olive oil then thread the seitain and veggies onto the skewers.
Grill the skewers, covered, over medium-high heat for 8 minutes or until seitan is hot and glazed with sauce. Brush skewers with any remaining sauce; turning occasionally to avoid burning. Enjoy!
