Ingredients
- 3/4 cup wild rice
- 3 cups water
- 1/2 tsp sea salt divided
- 30 oz cans of black beans drained and rinsed
- 15 oz can of diced tomatoes
- 1/4 tsp fresh ground pepper
- 1 tsp marjoram
- 3 cups baby spinach roughly chopped
Instructions
- In a large skillet add wild rice, water, and 1/4 tsp of sea salt. Bring to a boil. Reduce heat to low, cover and let simmer for 40 minutes.
- Add beans, diced tomatoes, pepper, remaining sea salt, and marjoram. Cover and continue to simmer for an additional 15 minutes.
- If too dry, add in a little water as needed.
- Add the spinach and toss to coat the spinach well. Cook for 5 more minutes.
