Ingredients
  

  • 3 tbsp soy sauce low sodium, NO SODIUM BENZOATE
  • 2 tbsp lemon juice fresh
  • 1 tbsp fresh ginger minced
  • 1 block firm or extra-firm tofu well pressed, cubed
  • 1 tbsp olive oil extra virgin
  • 4 cups bok choy or baby bok choy chopped
  • 1/2 tsp agave nectar
  • 1/2 tsp sesame oil

Instructions
 

  • In a shallow pan or pie pan, whisk together the soy sauce, lemon juice, and ginger. Place cubed tofu into the pan and marinate for 1 hour. Drain but save the marinade.
  • In a large skillet or wok, sauté tofu in the olive oil, for about 4 minutes or until tofu is toasted.
  • Slowly add in the saved marinade. Stir in the bok choy and agave, stirring frequently. Cook for about 4 more minutes, or until bok choy is cooked.
  • Drizzle sesame oil over mixture and serve.

This is great by itself or over a bed of rice.
