Ingredients
  

  • 2 tbsp lemon zest wash with baking soda to remove any pestisides before
  • 2 tbsp olive oil extra virgin
  • 1/2 cup water
  • 1/2 cup parsley chopped
  • 2 leaves bay
  • 2 tbsp thyme fresh
  • 1 1/2 cups carrot peeled, cut 1' long
  • 1 cup red bell pepper seeded, rough chop
  • 1 1/2 cups broccoli florets
  • 1 1/2 cups snow peas halved lengthwise
  • 1 1/2 cups button mushrooms halved
  • 1/4 cup green onions chopped
  • 3 tbsp lemon juice fresh squeezed, no sugar added or preservatives
  • 1/4 tsp salt
  • 1/4 tsp black pepper fresh cracked

Instructions
 

  • Mix together the zest and olive oil in a large saucepan then add in the water, parsley, bay leaves, and thyme; bring to a boil.
  • Stir in the carrots and cook for about 5 minutes then add in the bell peppers and cook another 5 minutes.
  • Continue to add in the broccoli, snow peas, button mushrooms and green onions; cook another 6 minutes.
  • Remove the bay leaves from the saucepan then sprinkle with lemon juice, salt and pepper to taste. Enjoy!
