Carrot and Lentil Soup

Ingredients
  

  • 1 tbsp olive oil extra virgin
  • 1 cup onion chopped
  • 1 1/2 cups baby carrots chopped
  • 2/3 cup lentils split red
  • 2 tbsp vegetable bouillon *see our Homemade Bouillon recipe link
  • 6 1/2 cups water
  • 1/4 cup lemon juice fresh squeezed, no sugar added or preservatives
  • 1 tsp salt
  • 1 tsp black pepper

Instructions
 

  • Heat the olive oil in a large saucepan over low heat and saut√© the onion for about 5 minutes.
  • Add in the carrots, lentils, bouillon, and water then bring pot to a boil.
  • Cover and reduce heat to simmer for about 20 minutes until the carrots are tender and the lentils are pale in color.
  • Pour the lemon juice, salt and pepper into the pot then puree the soup using the immersion blender. Serve hot and enjoy.
