  • 15 ounces chickpeas canned, rinsed, drained
  • 1/4 cup celery finely chopped
  • 1/2 cup pickle chopped
  • 1/4 cup red onion finely chopped
  • 1/3 cup mayonnaise plant-based
  • 1 tsp lemon juice fresh squeezed, no sugar added or preservatives
  • 1/4 tsp salt
  • 1/4 tsp black pepper fresh squeezed
  • 4 slices bread whole wheat
  • 4-6 pieces lettuce divided
  • 4-6 slices tomato divided


  • Place the chickpeas in a medium sized bowl then mash; leaving some beans whole.
  • Add in the celery, pickle, onion, mayonnaise, lemon juice, and salt; mix well.
  • Toast the slices of bread then layer with the lettuce, tomato, and chickpea salad. Sprinkle with the black pepper and enjoy.


Serves well with baked sweet potato chips.
