Ingredients
  

  • 4 cloves garlic minced
  • 1 medium carrot thinly sliced
  • 1 3/4 cups celery chopped
  • 2 tbsp olive oil extra virgin
  • 28 oz can of diced or stewed tomatoes
  • 6 oz can of tomato paste
  • 1 tsp oregano
  • 1 tsp parsley
  • 2 tbsp fresh basil chopped
  • 2 bay leaves
  • 1/2 cup corn frozen
  • 1/2 cup black olives sliced
  • 1 tbsp balsamic vinegar
  • 1/2 tsp red pepper flakes crushed

Instructions
 

  • In a large stock pot with a lid, heat garlic, carrots, and celery in the olive oil over medium heat for about 5 minutes. Stir frequently
  • Reduce heat to medium low and add in tomatoes, tomato paste, oregano, parsley, basil, and bay leaves. Combine well, cover and cook for 30 minutes, continuing to stir frequently.
  • Mix in corn, olives, balsamic vinegar, and red pepper. Simmer for 5 more minutes uncovered.
  • Remove bay leaves before serving.
